Diners’ questions on corkage

At sydneyrestaurants.com we’ve lately received many Diners’ questions on Corkage in Restaurants.

The diners all appreciate Licensed Restaurants who offer the courtesy of welcoming BYO Wine Only, and happily accept a Corkage fee there.

However, many diners believe that some recent higher Corkage fees, like $4 - $6 per person - including those from restaurants that are BYO only – are becoming unreasonable.


We invite further comment from both Diners and Restaurant owners on this issue.

If a diner cannot appreciate a restaurant that provides good stemware, good service & cleans & polishes the glasses, disposes of the empties for a corkage fee, easy don't patronize the restaurant! Work it out, a restaurant pays a loaded figure of approx $30/hour for staff. If a waiter in total serves a table of four their byo wine & then washes & polishes the glasses then it would be approx 20 minutes in total, which is $10 of labour, then the restaurant needs to make a profit so they may charge $6/person or $20/bottle. Bottom line is that the restaurant really doesn't make that much money on byo corkage. Do we complain when we go to the doctor on how much they charge for a 10 minute visit with only their time as the only cost involved, with a waiting period that a diner in a restaurant would not tolerate! Do people know how what nett profit restaurants make? Around 10%!!! We ae in the business to make money, we have financial commitments too! at the end of the day corkage is cheaper than buying a bottle of wine off the list, unless you are bringing cheap wine. As the late Len Evans said to me, "life is too short to drink bad wine". May I also add to that, life is also too short to whinge about paying for corkage. Drink up, cheers!
